Beef Vegetable Skillet Dinner
This recipe is a quick meal that combines protein and vegetables all in one dish. You can serve it by itself in a bowl; spoon the mixture into lettuce leaves or paleo-approved tortillas; or serve over warmed cauliflower rice.
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
- 1 Tablespoon olive oil
- ½ medium red onion, diced
- 2 cloves garlic, diced
- 1 red bell pepper, chopped
- 2 celery stalks, chopped
- 2 medium carrots, chopped
- 1 Tablespoon chili powder
- 1 teaspoon ground cumin
- Pinch of crushed red pepper flakes
- 1/2 teaspoon salt
- 1pound lean ground beef or turkey
- Zest of ½ fresh lime
- 3/4 cup fresh salsa
- ¼ cup chopped cilantro
Preparation:
- In a large skillet, heat oil over medium-high heat. Add onion and sauté for 2 minutes. Add garlic and sauté 1 minute, then add red bell pepper, carrots, spices, and celery and sauté an additional 3-5 minutes.
- Add ground beef and cook until no longer pink. Add lime zest and heat through.
- Served as desired, topped with 3 Tbsp salsa and cilantro.
