Breakfast Egg and Sausage Cups

Save time during your morning routine with ready-made breakfast that's packed with protein. Skip the overnight oats and frozen waffles---fuel up with easy to make paleo breakfast. These egg and sausage cups make paleo possible on-the-go, at the office or later as an afternoon protein snack. 
Breakfast Egg Cups
Prep Time: 20 minutes
Cook Time: 25 minutes
Ingredients:
6 eggs (option to use only 8-10 egg whites)
1/3 cup of lean protein like Diestel Turkey or Sausage
1/2 cup of frozen sweet potato hash browns
1/3 cup of frozen cut spinach leaf
1/2 Tbsp garlic powder
1/2 Tbsp pepper
Directions:
1. Preheat oven to 350 degrees. In a medium bowl mix eggs or egg whites with seasonings and lean protein.
2. Spray cupcake pan with olive oil or use silicone cupcake liners. Place sweet potato hash browns in cupcake liners, bake for 10-12 minutes until cooked.
3. Layer spinach on top of sweet potato layer, then add egg mixture, and sprinkle seasoning on top.
4. Cook egg cups for 25 minutes or until completely cooked.
Makes 12 egg cups
